Chef Julie Montgomery is the latest addition to Le Dolci’s team of cake decorators. Former head teacher of the now closed Bonnie Gordon College, Chef Julie teaches advanced cake decorating, cake sculpting and design, and multiple day classes at Le Dolci.
Julie Montgomery’s twenty year career has seen her working in the pastry department of the city’s top hotels, restaurants and alongside Chef Mark McEwan, where she was executive pastry chef of his top two restaurants Bymark and North 44.
At Bonnie Gordon College, she taught students from around the world to bake and decorate grand, sculpted, gravity defying cakes with sugar flowers crafted by hand. These creations looked so realistic, they were (almost!) too pretty to eat.
Chef Julie loves to make gum paste flowers, and her favorite cake is the classic Opera cake. She can’t live without her mini fondant rolling pin, wooden ball tool, dresden tool, flower veiner and her pasta machine for rolling out gum paste. It may be hard to believe, but the hardware store is her “go -to”, where she gets many things for building cake infrastructure.
At Le Dolci, she will teach some advanced cake decorating and sculpting classes such as the Carousel Cake class, Ice-Cream Cone decorating class and gorgeous Gum Paste Flowers. Additionally, she will also conduct an advanced cake decorating boot camp for kids, where they will learn to create some unique cakes such as a Burger & Fries Cake, Drip Cake, Monster cake and Minion Cake.
