The Le Dolci team is a huge fan of Green & Black’s chocolate, and the recipes compiled in their book are wonderful. From mousse cakes, to muffins, to truffles, you’re bound to find what you’re looking for. Aside from recipes loved by those with a sweet tooth, there are also ideas to go with savoury and spicy dishes. An interesting recipe we found is the chocolate soup – so decadent and rich, and with a splash of Grand Marnier, this soup will surely warm your heart and satisfy your sweet chocolate craving!
Recipes are collected from a wide selection of sources, including Laduree’s chocolate macarons and Nigel Slater’s white cardamom chocolate mousse. At the top of each recipe, there is a little blurb that explains the origin of the recipe and tips to make the most out of them. In addition to recipes, this book provides useful information on the cocoa bean and cocoa growers.
Le Dolci will be experimenting with some of these recipes, so keep your eyes peeled for some delectable chocolate creations at our shop in the future!
Sun, surf & sand! On June 17th come and join Le Dolci for some cookie decorating fun with Samantha from Flour Fancies. We have created a specialty cookie decorating class just in time for the summer weather where you will learn how to professionally decorate “beach, summer fun” themed cookies. From bikinis to flip flops and cute ocean critters, you will learn how to create the most adorable summer cookies to share at your next cottage picnic.
In this class, you will learn to decorate cookies using basic techniques, such as piping and flooding with royal icing and fondant. Students will leave with all cookies that they decorate!

After many requests, mini fondant cake classes have been added to our roster! In this class you will learn to work with fondant and sugar paste to create various dainty flowers, butterflies and cake embellishments. Students will learn to properly level, dirty ice and cover a cake in rolled fondant. This class will teach students tricks of the trade and all of the steps required to make a professional looking fondant, covered cake.
Who knows you may enjoy it so much, you may even decide to make your own wedding cake! Or friend’s birthday cake : )

Your canvass is your cupcake and your tools are your fingers and your imagination! Guided by the expertise of our lovely teachers, you will your own floral masterpieces to take home and enjoy with your family and friends! Join us for a class after the show, this class is suitable for any skill-level and any age.
Canada Blooms was founded in 1996 by the Garden Club of Toronto and Landscape Ontario. Today, it is the largest flower and garden festival in the country, celebrating the very best in Canadian gardening and floral design! It is the sweetest smelling show in the city! Here at Le Dolci it’s no secret that we LOVE cotton candy! So when we heard about the Cotton Candy Martini being served up in Liverpool, England our hearts skipped a beat! This particularly tasty beverage comes from Indigo Hotel, a famous hotel in Liverpool best know for their cotton themed decor. Playing on a little bit of the town’s history, the hotel features light fixtures in the shape of cotton-balls, cotton artwork and you guessed it cotton-themed delicacies!
So if you are in the mood for something extra sweet try making your very own Cotton Candy Martini!
Your sweet tooth will thank you!
Cotton Candy Martini Recipe
Tom, the mixologist at the Hotel Indigo helped create the drink. Here’s the recipe:
Start with a Boston shaker glass & add
- 50 ml, 1.5 oz of vodka
- 25 ml, .75 oz of Black Raspberry Liquor
- Splash of Grenadine
- Couple of squeezes of fresh lime juice.
Get a martini glass and put the cotton candy in it. (He made the cotton candy fresh-we luv!)
Fill your Boston Glass with Ice and give it a good shake.
Strain the mixture over the cotton candy which will melt the sugar.
Top it off with Prosecco

After months of hard work by our Cupcake Queen Miya and our amazing web designer Tom our online shop is finally live with 55 great cake decorating products! Cake decorating fans are now able to purchase all the fun tools that we use in our icing sugar filled classes as well as many other wonderful ones, in our online shop. We have chosen products that are most commonly requested by our students, as well selected a few others that we love and feel will help you create beautiful treats.
A few factoids:
- We ship across Canada (for US visitors, email us for special requests).
- If you live in the City of Toronto, you can purchase fresh cupcakes via the site.
- You can pick up all products from our studio in Downtown Toronto at King & Bathurst if you do not wish to have them delivered.
- We use Canada Post to deliver, so if you are not at home to receive your package you can collect it at your nearest postal outlet at your convenience.
Many of our students (and us!), found it difficult to find decorating tools & baking supplies on Canadian websites and even so much harder in the downtown Toronto core. With our pick up option and posting products across Canada, we hope that our online shop makes all of our decorating fans’ lives easier.

Make your own wonderful cupcakes at home with our starter kit!
- White rolled fondant-1kg -this is great for you to make any shapes and fun stuff to top your cupcakes with
- Fondant rolling pin- non-stick rolling pin is perfect for preparing small amounts of fondant to decorate with. Roll out fondant evenly, comes with two guide rings (1/8” & 1/16”)
- Food colouring– primary colors which can mix to make any colour 1) red 2) blue 3) green 4) yellow
- Cupcake cases – two packs: one for minis & one for regular sized cupcakes – these 500 packs will last for ages!
- Fondant cutters – basic 3 piece metal star, heart, circle and flower cutters (total qty. 4)
- Piping bags– we suggest reusable ones as you never need to worry about buying them again and also they are great for the environment! Our bags are made for pastry chefs so are great quality, made in Germany. Our 18inch bag is what we suggest for your sugary toolbox.
