1/2 cup milk
1/2 cup 35% cream
2 egg yolks
2 TBSP sugar
Chocolate Mousse (with half of creme anglaise)
3/4 cup dark chocolate (chopped)
2/3 cup soft whipped cream (35%)
Instructions for Creme Anglaise:
1. Mix egg yolks vigorously with sugar until pale yellow in colour.
2. Combine milk and cream in a pot. Bring to a rolling boil but do not leave the pot to overboil!
3. Temper hot liquid into egg mixture, adding a small amount of liquid and then whisky vigorously, multiple times. Do not cook the eggs!
4. Return whole mixture to pot and continuously whisk until the viscosity of creme anglaise is such that it clings to the back of a spoon and a line can be drawn through the cream on the back of the spoon.
5. Pass the mixture through a sieve and into container for fridge storage and cover liquid directly with parchment or plastic.
6. Serve cold alongside jello, chocolate cake…
Instructions for Chocolate Mousse :
1. Whip cream until soft peaks form.
2. Pour hot creme anglaise over chocolate. Leave to sit for ~30 seconds and then whisk until homogeneous.
3. Fold in whipped cream into chocolate/creme anglaise mixture, a third at a time.
4. Transfer to cups/dessert bowls and leave to set in the fridge, ~2-3 hours.

Here you’ll have the pleasure of experimenting with flavourful brews of ganache filling, outfitting your truffles in an attire of sweet coating, and learning how to pipe designs out of chocolate. All supplies are included with each of our classes and you’ll leave with a box full of delicious and dainty chocolate truffles! Cost: $85.00

Dolfin’s Gourmet Squares
Dolfin is an exquisite chocolate brand from Belgium, and their quality is exceptional. Dolfin is available at Pusateri’s, Chocolate Addict and Home Sense, but we got this specific one from Home Sense.
Here’s a breakdown of what we thought!
. very small & thin, so we finished them all in one go!
. Earl Grey – dark chocolate, peppery, aromatic, toasty, and crunchy
. Citron – dark chocolate & candied lemon peels. Not tangy and strong, but more like an undertone of the citrus fruit
. Lait – milk chocolate. Definitely not the “kiddy” type as it was smooth and not sweet
. Lait Nougatine – milk chocolate & almonds. A bit sweet, crunchy and nutty
. Noir 70% – 70% dark chocolate. Smooth and slightly bitter
. Noir 88% – the right amount of bitterness and very “adult-like”
If you’re a chocolate fanatic and enjoy different types, then perhaps you’ll enjoy these!
It’s cherry blossom (sakura) season! So with sakura, comes limited edition matcha & sakura kit-kats; wonderful! We’ve only tried matcha and sakura kit-kats, but not with the two together. We spotted them at the Japanese grocery store Sanko, located on Queen St West, between Bathurst and Ossington. Yes, the box says “maccha”, but we’ll keep it “matcha” for now.
When we opened the packaging, there was this whiff of matcha and we were transported to heaven. Taste wise, we definitely tasted the matcha more. Sakura is fragrant and has this very distinctive taste, and you kind of taste it at the end. It’s a bit indescribable, but when you taste it, you’ll know. It kind of lingers at the back of your tongue. Since it’s a latte version, this kit-kat is very creamy and smooth – you’ll notice it for sure. This exquisite kit-kat isn’t just a simple piece of sweet chocolate wafer, because boy, it’s so much more than that!
