Friday Night’s at the ROM
For the next eight weeks we’ll be dancing Friday nights away and selling party-goers macarons and dessert shots matching each week’s theme. We’ve added a few new classes to our fall repertoire!
Here is a brief description of one of our new favourites: A Lesson In Molecular Gastronomy – Desserts
In this two-hour, hands-on workshop discover the mysteries of the new “modernist cuisine” movement. Learn new and delicious ways to manipulate food products, presenting them in new forms on your plate. This includes Caviar Bubbles which topped our latest creation: the world’s most expensive cupcake.
Utilizing cooking techniques such as Spherification, Powderizing, Gelification and Air and foams we will create new and exciting dishes to tantalize the senses.
We will familiarize you with ingredients such as sodium alginate, agar agar and Tapioca Maltodextrin.
All participants will receive a set of recipes used in the workshop; and as always, everything is included in the cost (ingredients, tools and supplies).
We hope you join us on September 25th from 7-9pm for the first class!
Team Le Dolci
While our Canadian athletes were going for gold in Sochi, Team Le Dolci was busy making a cake of absolute Olympic proportions here on Dundas West. We created our LARGEST cake order to date, a life-sized Canada Flag cake for a special Olympic celebration at Fairview Mall.
What goes into an eight foot by four foot cake? We asked Chef Sharon here’s what she said:
- Eggs: we don’t actually know. A lot. Like… 450?
- Flour: 60 cups
- Butter: 80 pounds
Our bakers and designers spent an entire day baking the fourteen sheet cakes needed to make such an epic dessert. Our head designer, Annie and the rest of the design team spent nearly nine hours assembling and icing the cake. It took 14 buckets of our deliciously smooth swiss meringue buttercream!
While there wasn’t a gold medal for the effort, watching these happy fans enjoy the final product made it totally worth it!

We are hosting a Mother’s Day afternoon tea on Sunday, May 12 from 3:30 – 5:30pm.You and Mom will enjoy delicious treats like macarons, tarts, finger sandwiches, cupcakes and scones! You will also enjoy a selection of TeaLish teas and freshly brewed Detour coffee.

Our Mummy/Daddy and Me classes are for parents looking for something creative and fun to do with their little ones. The first part of the class is working with colouring fondant and using it to create lots of fun kids’ shapes like elephants, giraffes, butterflies, and more. The second half of the class allows kids to try piping vanilla buttercream icing onto their cupcakes using a variety of tips.
This is definitely a great opportunity for mommies or daddies and their child to spend some quality time together, having fun, and letting their creativity shine through! At the end of the class, everyone gets to leave with 6 decorated cupcakes ready to be enjoyed!
