Macaron History

Some have traced the macaron’s French debut back to the arrival of Catherine de’ Medici’s Italian pastry chefs whom she brought with her in 1533 upon marrying Henry II of France.

It was not until the 1830s that macarons began to be served two-by-two with the addition of jams, liqueurs, and spices. The macaron as it is known today, composed of two almond meringue discs filled with a layer of buttercream, jam, or ganache filling, was originally called the “Gerbet” or the “Paris macaron.” Pierre Desfontaines of the French pâtisserie Ladurée has sometimes been credited with its creation in the early part of the 20th century, but another baker, Claude Gerbet, also claims to have invented it.

Macaron vs. Macaroon

No, French Macarons & Macaroons aren’t the same thing!

Let’s put an end to the confusion. Macarons (rrrrrroll your ‘r” like tu viens de Paris!) and macaroons, while both delicious, are very different. Both are made from gluten free recipes, but that’s where the similarities end.

The macaron is a delicious and adorable treat made from almond flour, egg whites, granulated and powdered sugar. Normally they are filled with a buttercream, ganache, or various jams. They come in a variety of colours and can be customized to meet all your macaron needs. This treat is currently on trend because it’s gluten free and so darn pretty!

The macaroon is a much simpler and not-quite-as-cute confection. It’s made from egg whites, sugar, and shredded dried coconut and sometimes dipped in chocolate. Still yummy, but definitely not a French macaron!
