Things We Love: Jiro Dreams of Sushi

Jiro Dreams of Sushi is a documentary about Jiro Ono, an 85 year old sushi chef from Tokyo. He is the owner of Sukiyabashi Jiro, a restaurant that only seats 10, located in a Tokyo subway station. It was awarded three Michelin stars and Chef  Ono is hailed as one of the greatest sushi chefs in the world.

In this 81 minute documentary, viewers are introduced to Chef Ono’s two sons and apprentices, revealing the lengthy and strict apprenticeship they must go through. Chef Ono tells us about his rough childhood, his fish and rice dealers, and his strive for constant improvement. He would have visions of sushi in his dreams and jump out of bed with ideas!

This was an intense, humourous, and inspirational documentary that really got us thinking and changed our perspective on things. Chef Ono mentioned  “we must fall in love with our job and spend our life to perfect that skill”. We were able to understand his achievements as well as gain a deeper appreciation for the art of sushi. Let’s not leave out the high quality and glistening creations at Sukiyabashi Jiro that left us all craving for sushi after!
