Chef Mitch Leger will be teaching us his tips and tricks in our 4 Week Bread Masterclass on Monday nights. After a short period as an elementary school teacher, Chef Mitch found himself gravitating towards food and cooking. He'd go to restaurants and would have his favourite desserts and think, "I wonder if I can make that?". He began baking and slowly moved into making breads spending hours experimenting with various recipes and tweaking them until he perfected them.

Chef Mitch opened a restaurant in Kingston, where he was Head Chef and made all the desserts and breads. He is now the Head Chef for a small restaurant just outside of Kingston. His passion for bread and teaching has led him our way and we are excited to have him join the Le Dolci family.

In our four-week bread series, you'll learn the following:

Week 1: Pullman’s Bread and Bread Rolls
Basic understanding of classic sandwich bread recipe as well as an understanding of shaping and baking soft and delicious bread rolls. Each student will leave with a loaf of white bread and a half dozen burger buns.
Week 2: Focaccia and Naan Bread Learning how to make a focaccia dough tips and tricks on how to shape & bake it. Learning the difference in different flatbread doughs and how to make a naan bread dough and cook it on the stovetop. Each student will leave with a loaf of focaccia and naan bread.
Week 3: New York Style Bagels Learn how to make New York style bagels. Making the dough, shaping the bagels, boiling them, and baking them with different topping options. Each student will leave with their own New York style bagels.
Week 4: Holla for Challah! Learn to make a challah dough, dividing the dough, rolling it out, as well as different ways to braid the bread. Each student will leave with one loaf of challah bread.
