What's your favourite thing about summer? We wouldn't be able to name just one, but we're sure the bounty of fresh Ontario fruit would be near the top of our list. Peaches, apricots, plums, strawberries, blueberries, blackberries - we love them all! 

Sure, they're dreamy and sweet on their own. They're also the perfect addition to any dessert. Pies, naturally, as well as cobblers, shortcakes, cheesecakes, too. And, of course, they're a perfect topping to ice creams, gelatos, sorbets and froyos.  

Baking with summer fruit is a must for Team Le Dolci. 

Last week, I escaped the city for cottage country. I couldn't get over the beautiful strawberries at the fruit stand just up the street from our place. So, I grabbed a few pints and headed home to bake up a strawberry shortcake to enjoy by the camp fire with the new friends we made during our stay. 

I used our traditional sponge cake, topped with a simple whipped cream, and just-picked strawberries. Easy and so incredibly delicious.
