Hey Toronto, here's TWO of Le Dolci's favourite Cookie Recipes


Le Dolci just had our 1st Annual Cookie Exchange! Now we want to share our own cookie recipes with you!

Chocolate Crinkle Cookies: Rich, fudge like and soft-baked in the center. A chocolate lover's dream!

  • ½ cup room temperature Butter
  • 2 cups Sugar
  • 4 Eggs
  • 2 tsp Vanilla
  • 1 ½ cups Flour
  • 1 ½ cups Cocoa
  • 2 tsp Baking Powder
  • ½ tsp Salt
  • Icing Sugar for rolling

Method

  1. Cream butter and sugar together until light and fluffy.
  2. Add eggs one at a time making sure each addition is fully incorporated. 
  3. Add vanilla to the mix. 
  4. Combine flour, baking powder, and salt in another bowl. Gradually stir dry ingredients into the wet ingredients until thoroughly mixed.
  5. Form dough into balls of about 1 -3 tablespoons and place on a plate or baking tray leaving space in between each dough ball and let chill in the refrigerator until firm for approximately 10 minutes.
  6. Roll dough balls in icing sugar.
  7. Bake for 8-12 minutes at 350*F - cookies will have cracked and look slightly soft in the middle.
  8. Let cool on the tray.

Linzer Cookie Recipe: Delicate sandwich cookies reveal a jewel-like jam center

  • 560g All purpose Flour 
  • 185g Icing sugar
  • 20g Vanilla
  • Approximately ½ cup AP flour for dusting
  • 425g Butter
  • 1 egg 
  • Jam of your choice for the filling 

Method

  1. Cream butter and sugar together until light and fluffy.
  2. Add eggs one at a time making sure each addition is fully incorporated. 
  3. Add vanilla and mix through.
  4. Add All Purpose flour in 2-3 stages.
  5. Once dough comes together, take out the mixer and portion into a flat patty.
  6. Wrap in plastic wrap and store in the freezer for about 20 minutes or in the fridge for about 1 hour. 
  7. Roll out cookies to 3/4 inch thick and cut into desired shapes.
  8. Bake for 10-12 minutes or until slightly puffed and set. 
  9. Add jam and sandwich.
