Over five delicious days, you’ll spend five hours in the kitchen each day (with a well-deserved lunch break!), learning classic techniques and creating beautiful desserts inspired by the bakeries of Paris.

Day 1: Classic French Tarts

We start our pastry journey with one of the foundations of French baking: the classic tart.

You’ll learn how to make buttery tart pastry from scratch and practice lining, baking, and filling your tarts like a pro. From elegant fruit tarts to rich chocolate creations, this day is all about mastering the balance between a crisp pastry shell and luscious fillings.

Day 2: Laminated Pastries

Day two is where things get wonderfully buttery.

Our chefs will guide you through the art of laminating dough, the technique that creates those beautiful flaky layers in croissants and pain au chocolat. You’ll learn how to roll, fold, and shape laminated dough while discovering the secrets behind bakery-quality pastries.

Expect flour on the counter, butter in the dough, and the incredible smell of fresh croissants baking in the oven.

Day 3: Enriched Doughs

Next, we move into the rich and indulgent world of enriched doughs. These doughs are packed with ingredients like butter, eggs, and sugar, creating breads that are soft, fluffy, and deeply flavorful.

You’ll learn how to make classic brioche and explore techniques for other enriched doughs like babka. This day is all about understanding texture, fermentation, and how to achieve that perfect golden crumb.

Day 4: Choux Pastry

Few pastries are as iconic as éclairs and cream puffs, and day four is dedicated to mastering choux pastry.

You’ll learn how to make choux dough, pipe éclairs and profiteroles, and understand how the dough transforms in the oven. Our chefs will also introduce craquelin, the crisp topping that gives choux pastries that signature bakery finish.

Of course, the best part is filling and decorating your creations once they’re baked.

Day 5: Macarons & Sweet Soufflés

We end the week with two of the most beloved French desserts: macarons and soufflés.

You’ll dive into the delicate process of macaronage as you create smooth shells with beautiful feet and a seasonal filling. Then, you’ll learn the secrets behind airy sweet soufflés — light, elegant desserts that rise beautifully when made with the right technique.

It’s the perfect sweet finale to five days of baking.
