Running April 20–24, 2026 (10:00 AM – 3:00 PM each day), this is a hands-on immersive series where you'll spend 25 hours in Le Dolci's professional culinary classroom learning the foundations of French pâtisserie. Every ingredient, every tool, every transport box is provided — you bring nothing but yourself.

This isn't a passive cooking demo. You'll be at the bench, piping, rolling, laminating, and decorating under the guidance of Le Dolci's professional chefs. The pace is tailored to you, so even if it's your very first time handling pastry dough, you'll keep up and thrive.

What You'll Learn Over 5 Days

Day 1: Classic French Tarts

Master the buttery shortcrust pastry base, learn to line and blind-bake a tart shell without shrinking, and create showstopping fillings — from silky chocolate ganache to seasonal fruit with crème pâtissière. You'll leave day one with a finished tart and a skill set that will last a lifetime.

Day 2: Laminated Pastries — Croissants & Pain au Chocolat

This is the day most students are both most excited and most nervous about. Laminated dough — the technique behind croissants — requires patience and precision. You'll learn to layer butter into dough through repeated folds, creating hundreds of flaky layers. By the end of day two, you'll have made croissants from scratch.

Day 3: Enriched Doughs — Brioche & Babka

Enriched doughs use eggs, butter, and sugar to create tender, pillowy bread with incredible depth of flavour. You'll make classic brioche and indulgent babka, learning how fermentation, fat content, and technique interact to produce that signature rich texture.

Day 4: Choux Pastry — Éclairs & Profiteroles

Choux is pure magic: a cooked dough that puffs hollow in the oven, ready to be filled with pastry cream and glazed with chocolate. You'll master the piping technique for éclairs and profiteroles and learn croquelin, the crisp pastry disc that takes cream puffs to the next level.

Day 5: Macarons & Sweet Soufflés

The grand finale. Macarons are notorious for being temperamental — and that's exactly why mastering them feels so satisfying. You'll learn the macaronage technique, the secret to smooth shells and proper feet, and create a seasonal filling. Then you'll tackle sweet soufflés, perhaps the most dramatic dessert in the French repertoire.
