Beaver Tails and Butter Tarts
(it doesn't get more Canadian eh?)🇨🇦
Recipe 1: Classic BeaverTails
A Canadian street-food legend. These deep-fried dough pastries — shaped like a beaver’s tail and dusted in cinnamon sugar — are pure nostalgia. Perfect for sharing under the summer sky.
INGREDIENTS
170g warm milk
8g dry active yeast
30g sugar
1 egg
30g melted butter
½ tsp vanilla
½ tsp salt
300–350g flour
CINNAMON SUGAR TOPPING
½ cup sugar
2 tsp cinnamon
DIRECTIONS
Combine warm milk and yeast in a mixer bowl. Let rest 5 minutes until foamy.
Add egg, butter, vanilla, salt, and sugar. Mix to combine.
Add flour and knead 8–10 minutes until a soft dough forms and pulls away from the bowl sides.
Let dough rest 1 hour at room temperature.
Divide into 6 pieces (approx. 100g each). Shape into elongated ovals and rest 15–20 minutes.
Heat a flavourless oil to 350°F in a deep pot or fryer.
Fry each tail 1–2 minutes per side until golden.
Immediately toss in cinnamon sugar — or top however you like!
Recipe 2: Classic Butter Tarts
Buttery, flaky pastry filled with a gooey brown sugar centre. The butter tart is arguably Canada’s greatest contribution to the dessert world — and once you’ve made them from scratch, there’s no going back.
PASTRY
400g all-purpose flour
1 tsp salt
210g cold butter
90–150ml cold water
FILLING
60g softened butter
340g brown sugar
2 eggs, lightly whisked
2 tbsp corn syrup
2 tsp vanilla extract
PASTRY INSTRUCTIONS
Combine flour and salt in a large bowl.
Grate cold butter into the flour and toss to coat.
Drizzle in cold water and toss with a fork until absorbed. Form into a disc, wrap in plastic, refrigerate at least 1 hour.
FILLING INSTRUCTIONS
Using a wooden spoon, cream the butter and brown sugar until light and fluffy.
Stir in the eggs.
Add corn syrup and vanilla. Mix until smooth — do not overmix or the filling will sink.
ASSEMBLY
Preheat oven to 375°F. Grease a 12-cup muffin pan (silicone works best).
Remove dough from fridge and divide into 12 pieces.
Roll each piece into a round large enough to line a muffin cup. Place in pan, pinching any excess at the top.
Pour filling evenly into each cup — use all of it.
Bake 30 minutes until crust is golden and centres are bubbling.
