Chocolate Masterclass Level 4
Tempering chocolate is one of those techniques that sounds impossibly technical — temperatures, seeding, the difference between chocolate that sets glossy and snappy versus dull and soft.
It's also one of the most satisfying skills to finally crack.
Students who have struggled with chocolate for years leave this class saying the same thing: "I can't believe I can do this now."
Whether you're booking for yourself or giving this as a gift, it's the kind of class people ask about doing again before they've even left.
Join us for our NEW Level 4 Chocolate Masterclass: Enrobing Caramel, Sponge Toffee & Orangettes!
This is a 3 hour class.
Step into the world of artisan confectionery in this hands-on chocolate enrobing class, where rich, buttery caramel meets perfectly tempered chocolate. In this immersive workshop, you’ll learn how to cook smooth, flavorful caramel from scratch—balancing texture and depth to create the ideal center for enrobing.
Once your caramels are cut and ready, you’ll be guided through the fundamentals of chocolate tempering and dipping techniques. Learn how to hand-dip each piece, achieving that signature thin, glossy shell with a satisfying snap. Along the way, you’ll explore finishing touches like decorative drizzles and crunchy inclusions.
In this class you will learn:
- Defining characteristics of caramel and how to tweak ratios for the perfect texture
- How to make buttery caramel and sponge toffee from scratch
- How to temper couverture chocolate
- How to efficiently enrobe using expert techniques
- How to garnish chocolate enrobed items
By the end of the session, you’ll have your own handcrafted collection of chewy caramels, crispy toffee and luscious orangettes to take home—along with the recipes, knowledge and inspiration to continue creating sweet masterpieces in your own kitchen.
