DOUGH - Croissant Class
Croissants have a reputation for being the kind of thing only great French bakeries can pull off.
The lamination, the folding, the butter that has to stay cold at exactly the right moment — it sounds precise because it is.
But it's also completely learnable, and there's nothing quite like understanding the craft behind something you've eaten a hundred times.
You'll leave with the confidence to do it again on your own.
This class is a beautiful gift for anyone who loves butter, pastry and wants to make delicious croissants just like their favourite French bakery.

This is a 2 hour class
The base of the dough will be premade by us so you can get to the super fun part of rolling your laminated dough. This class is instructed by one of our very talented chefs. What a great way to spend a day! The best part is, you will bring home unbaked perfectly rolled croissants YOU will have made. Enjoy them for breakfast or as an afternoon treat for days to come.
In this class, you will learn:
- How to layer butter into dough
- How make and roll out your own laminated dough
- The science behind laminated dough
- How to cut and properly roll croissants
- How to use essential kitchen equipment to achieve a successful croissant
You will go home with:
- About a dozen or more unbaked croissants to bake at your leisure at home
- New understanding of laminated dough
- An understanding on how to replicate the recipe and achieve successful croissants
- Butter croissant recipe (emailed to you before class)
All ingredients and equipment, including transport boxes, for your croissant course are provided, you do not need to bring anything with you. The teacher will ensure that you work at a pace suitable for you.
Please note there is a lot of rolling and layering of the dough in this class.
If you would like, you can bring a bag to carry your croissants home. We provide sturdy cardboard boxes, but you may find it easier to carry your croissants in a reusable tote bag especially if taking public transit to class.

FAQ: Bread Classes
Is this class suitable for beginners?
Yes, our Intro to Bread: Challah & Babka Class, Croissant and the Italian Aperitivo & Focaccia Workshop are both great for beginners, no experience needed.
How long is the class?
Challah & Babka and Croissant are both 2 hours. The Italian Aperitivo & Focaccia Workshop runs a bit longer to include the aperitivo experience while your dough proofs and bakes, check the product page for exact timing.
Do I take my bread home baked, or do I bake it myself?
For Challah & Babka and Croissants, you'll leave with unproofed or unbaked dough to finish at home, filling your kitchen with that fresh-baked smell on your own time.
Do I need to bring anything with me?
No, all ingredients and equipment are provided across all classes at Le Dolci Culinary School Toronto.
Will I get the recipe afterward?
Yes, the Challah dough and crumble recipe and the Croissant recipe are both emailed to you before class so you can recreate them at home.
Is the studio accessible?
Classes may be held in our upstairs studio, which is accessible by stairs only. If you need accommodation, please email us in advance and we'll do our best to help. Our downstairs studio is wheelchair accessible but our table heights are higher than usual for cooking purposes. Please email us in advance to discuss if we can accommodate.
How much bread will I go home with?
Challah & Babka: two loaves, one classic braided Challah and one filled Babka. Croissant: about a dozen unbaked croissants, qty varies on how small or large you cut and roll your croissants.
Is this a good gift or date idea?
Definitely all classes at Le Dolci Culinary School Toronto are great gift ideas! The Focaccia Workshop especially makes a great date night thanks to the aperitivo element, while Challah/Babka and Croissants are wonderful gifts for anyone who loves fresh-baked bread or wants to build real baking confidence.
