MAKE MOUTHWATERING MEALS IN THE MOUNTAINS OF ITALY


A CULINARY ADVENTURE IN NORTHERN ITALY AWAITS

Dates: Monday May 18-Saturday May 23rd, 2015

Join us in Northern Italy, where you will meet Chef Riccardo de Pra and stay with him on his estate and working farm in the Dolada Mountains. Experience farm to table cooking classes in the chef’s Michelin starred kitchen and work with him to create daily meals. Meet local prosecco producers and spend a few nights in Venice enjoying the food, sights and cocktails in a traditional Venetian bacari.

All guests are invited to arrive in Venice at their leisure. The adventure begins Monday morning.

Day 1: Monday

Arrivals at Chef Riccardo's estate located in the scenic Dolada Mountains. Here you will meet and greet with the Chef and the other guests. Enjoy a welcome drink before beginning your first cooking class which is a hands on basics class teaching you the traditional items for a three course Italian meal. Using local ingredients from Chef’s farm, you will make brodo, primi, secondi, contorni and dolci for your meal. After your hard work you will enjoy the meal with local wine pairings, relaxing in the beautiful Italian countryside.

Day 2: Tuesday

For early risers, there will be a morning hike with photographer Darrell Munro to capture some of the local area’s beauty. Bring your cameras for tips on how best to capture the mountain light. Darrell will also be on hand this week to give us tips on how to photograph and food style. After the morning hike, we'll head back to the kitchen to learn the secrets of the best Italian breads including rolls, focacci and pizza. We’ll prepare a homemade risotto for lunch to compliment our freshly baked bread. We will then spend the early evening at a nearby Cantina to taste the best prosecco & biodinamic organic Italian wines of the region. For dinner, we’ll head to a nearby village to enjoy a meal in a restaurant overlooking an ancient castle.

Day 3: Wednesday

Experience the thrill of the hunt this morning – the truffle hunt that is! We will head into the forest to get in touch with our sweet side and harvest our own batch of honey. We will have a chic forest picnic prepared by Chef Riccardo Da Pra in his mobile kitchen amongst nature. This afternoon we continue our delicious discoveries with a visit to a local pasticceria for a coffee tasting with a local bean master. Tonight Chef Riccardo treats us to a dinner of fresh game from his own estate.

Day 4: Thursday

This morning we head out for a journey to visit wine makers that many are not able to often meet. We will spend this morning these iconic winemakers near Trieste learning about their philosophy of wine making and the history of their vineyards. Photographer Darrell Munro will give us a mini lesson in food styling at the winery, teaching us how to shoot food and wine in the best light. We’ll enjoy a traditional meal at the winery before setting off to Venice.

Take the evening to explore Venice’s cobblestone streets and charming waterways or simply relax and watch the sun set. Dinner is on your own this evening.

Day 5: Friday

Enjoy a free morning to visit Venice’s museums, cafes and historical sites, walking off the delicious meals you enjoyed all week in Dolada. Still hungry for more? Stray off the beaten track for a Venetian food tour* and experience the unexpected delights and hidden culinary gems of the city. We will provide recommendations for guests this morning.

This evening we will re-convene for a bacari tour and visit with one of the most famous and charimsatica bacari owners in Venice. There will be traditional Venetian fare and you will sample “ombra”, prosecci or glasses of local wine from the owner’s extensive collection. Expect the drinks to flow late into the evening on our final farewell celebration.

*Optional Venetian food tour not included.
