This is a 5 day course running for 5 hours each day
DAY 1: FOUNDATIONS OF VANILLA CAKE BAKING AND BUTTERCREAM THEORY
- Learn how to scale out, mix and dye vanilla cake (Christmas theme)
Learn about oil cake theory - The method behind Swiss meringue buttercream and how to make it
- How to colour buttercream
- How to use a piping bag and practicing piping design techniques
DAY 2: MAKING A HOLLY JOLLY STRIPED HOLIDAY CAKE
- Learn how to scale out and mix chocolate cake
- How to use piping bags and tips to decorate cupcakes with buttercream
- How to fill a 2 toned piping baking bag
- How to pipe a rose, ruffle, and 5 petal flower with petal tips
- How to pipe leaves and foliage to complete your cupcakes
- How to pipe a rosette and other common cupcake designs
DAY 3: BUTTERCREAM PIPING AND TECHNIQUES ON CHRISTMAS CUPCAKES
- How to use piping bags and tips to decorate cupcakes with buttercream
- How to pipe a rose, poinsettia, holly and christmas wreaths with petal tips
- How to pipe leaves and foliage to complete your cupcakes
- How to pipe a rosette and other common cupcake designs
Day 4: INTRODUCTION TO GUMPASTE AND FONDANT:
MAKE A WINTER WONDERLAND FONDANT CAKE
- Where to buy and how to store fondant and gumpaste
- How to colour fondant and gumpaste
- How to mix fondant and gumpaste
- How to make fondant evergreen trees
How to cut and layer a chocolate cake - How to use essential cake tools to achieve smooth straight sides on you cake
- How to cover your cake in fondant and which tools to use
- How to use fondant cutouts to decorate and finish your cake
- How to add proper supports to your gumpaste teddy bear before placing on your finished cake
Day 5: MASKING & STACKING:
HOW TO MASK AND STACK A 2 TIERED BUTTERCREAM CAKE
- How to pick out proper sizing for a two tiered cake
- How to cut and layer a vanilla cake
- How to use essential cake tools to achieve smooth straight sides on you cake
- How to properly add supports and stack a two tiered cake
- How to use coloured buttercream to add design elements to your cake
- How to pipe on a tiered cake
- We will be creating a 2 tiered Holiday Cake that belongs in a Ryan Gosling's next Holiday rom com.
You will go home with:
- A dozen decorative buttercream cupcakes that you designed on Day 2
- A one tier 6’’ round tall rainbow cake that you will have decorated yourself on Day 3
- A one tier 6’’ round fondant cake with gumpaste topper that you will have created on Day 4
- A two tiered buttercream cake, with a 4” round top and 6” round base that you will have decorated on Day 5
- New understanding of Swiss meringue buttercream
- New understanding of chocolate cake and vanilla cake oil theory
- New skills in decorating using current/on trend techniques and designs
- An understanding of layering cakes
- An understanding of how to stack and add proper supports for two-tiered cakes
- An understanding on how to replicate future cakes and style
- Chocolate cake recipe, vanilla cake recipe, Swiss meringue buttercream recipe, and chocolate glaze recipe (emailed to you after class)
- A ‘How to use piping tips’ recipe (emailed to you after class)
Pictures are for display purposes only. Your teacher will talk you through design elements in any picture shown, but for efficient running of this class, you will be guided by her in terms of design.
All ingredients and equipment, including transport boxes, for your cake course are provided, you do not need to bring anything with you. The teacher will ensure that you work at a pace suitable for you.

If you would like, you can bring a large bag to carry your cake(s) home. We provide sturdy cardboard boxes, but you may find it easier to carry your cake(s) in a reusable tote bag especially if taking public transit to class.
