Gnocchi al Sugo di Carne - Gnocchi with slow-cooked pork rib and sausage ragù.
"This brings me straight back to my grandmother’s kitchen. We’d arrive on Sundays to find the table covered in gnocchi and the sauce bubbling gently on the stove. My sister and I always stole some bread to dip into the pot before lunch."
Spaghetti alla Carbonara - Fresh spaghetti with guanciale, pecorino, egg yolks and black pepper. Simple but powerful.
"I make this whenever I need to feel at home. It tastes like Rome in every bite, intense, comforting, but also surprisingly easy to prepare."
3. Pollo alla Cacciatora Romano - Roman-style chicken with garlic, white wine, rosemary and olives.
"My grandfather’s favorite dish. I still remember him making the traditional “scarpetta” to finish all the rich sauce left in the plate. It was his favourite part of the lunch.”
4. Torta della Nonna - Shortcrust pie filled with lemon custard and topped with pine nuts.
“This pie ended almost every birthday or family gathering lunch growing up. Slightly burnt edges, creamy center, powdered sugar on top. Even after a full meal, we never had leftovers.”
