Course Description:
In this three-course series, you will learn from the Chocolatier, artist, and Pastry Chef Lindsey Greflund beginning with the science of chocolate and its many uses, bon-bon making, and chocolate moulding, and graduating to the artistic creation of 3D shapes and showpieces.
Chocolate Masterclass Level 1 (for beginners)
In this two-hour class, you will learn the basics of:
- Tempering couverture chocolate
- Working with ganaches
- How to create your own signature infusion
- How to enrobe truffles & fruit

Chocolate Masterclass Level 2 (for beginners)
In this three-hour class, you will learn:
- Basics of moulding chocolate & bonbon making
- Working with cocoa butter
- Create an assortment of flavourful bark
Chocolate Masterclass Level 3 (advanced)
The grand finale of the Chocolate Masterclass is a two-day workshop (three hours each).
In these two workshops, students will learn how to:
- Create chocolate flowers & 3D shapes
- Assemble chocolate showpieces and work with chocolate clay
