Dubai Chocolate Class

Pistachio Filling

Here is what you will need:

Ingredients:

30 grams Kadaifi (toasted)
15 grams icing sugar
10 grams sunflower oil
10 grams tahini
115 grams pistachio paste
250 grams milk chocolate (75 grams for seedings + 175 grams for melting; 30% of total
weight)
15 grams cacao butter and 1.5 grams fat based colour (the amount of colour should be
10% of cacao butter, therefore this amount will be enough for both molds)

Instructions:

For the paint

1. Heat the cocoa butter in 15 second intervals in the microwave until melted. Add a few drops of oil-based food colouring and/or
luster dust. At about 30°-31°C, it is ready to use for painting the
molds.
2. Mix all ingredients (except chocolate) in a bowl. Pistachio filling is ready.
Temper milk chocolate using seeding method as demonstrated in class.
Melt milk chocolate at 45°C. Once fully melted, add the seeds. Use when it
reaches 28°-29°C.
3. Pour enough tempered chocolate into the mold to coat it and form a
shell. Let it set at room temperature or place it in the fridge to speed up the
setting.
4. Pour the filling inside of the shell. Cap the mold with tempered milk chocolate and place it in the fridge.

When it has set, unmold the chocolate. Enjoy your delicious Dubai
Chocolate!

Almond Filing

Here is what you will need:

Ingredients:

30 grams shredded coconut
15 grams icing sugar
5 grams sunflower oil
115 gr almond paste
250 grams dark chocolate (75 grams for seedings + 175 grams for melting; 30% of total
weight)


Instructions:


1. Mix all ingredients (except chocolate) in a bowl. Almond filling is ready.
2. Temper dark chocolate using seeding method as demonstrated in class.
Melt milk chocolate at 45°C. Once fully melted, add the seeds. Use when it
reaches 31°-32°C.
3. Pour enough tempered chocolate into the mold to coat it and form a
shell. Let it set at room temperature or place it in the fridge to speed up the
setting.
4. Pour the filling inside of the shell.
5. Cap the mold with tempered dark chocolate and place it in the fridge.

When it has set, unmold the chocolate. Enjoy your delicious Dubai
Chocolate!
