“We had huge trays of supplì for birthdays or parties. We'd burn our fingers trying to eat them too soon, just to see the mozzarella stretch like a telephone cord.”

2. Cannelloni di Carne al Forno - Baked fresh pasta tubes filled with seasoned meat and topped with tomato sauce.

“My sister and I used to fill each one by hand and line them up like soldiers in the pan, while my grandma was taking care of the sauce. It made us so happy to help her in the kitchen (and also made us obtain a special treat from Nonna at the end!)”

3. Abbacchio al Forno con Patate* - Roasted lamb chops with garlic, rosemary and golden potatoes.

“The scent of Easter in Rome. Lamb roasting in the oven, rosemary in the air, and a table full of noise and anticipation.”

* Depending on availability, this may be replaced with: Saltimbocca alla Romana con Patate Arrosto. Veal slices with prosciutto and sage, served with roasted potatoes Baccalà con i Ceci. Salted cod with chickpeas — humble, traditional, and full of comfort.

4. Crostata di Ricotta e Visciole - Shortcrust pie with sweet ricotta and sour cherry jam.

“My grandmother’s crostate were never perfect, with jam bubbling out, crooked strips, slightly burned at the edges, but they were the most loved dessert in our family.”
